Two Healthy Recipes for the Whole Family

As moms, we struggle to cook dishes everyone in the family will like. I love to have easy recipes on hand. I am sharing my 3 of my go-to healthy family recipes which make my life easier. Try them out with your family and let us know what you think! 

1. Pesto Pasta

Most kids love pasta and we love to make it because it only takes about 15 minutes to cook, depending on which pasta you use. I usually buy the ones that are made out of lentil or chickpea flour because they have more protein. Regardless of your pasta selection, use this pesto recipe to go with it!

  • ½ cup pine nuts (or almonds)
  • ¾ cup of Parmesan, grated (if you are vegan, this is optional)
  • 2 garlic cloves
  • 6 cups basil leaves (about 2 packages)
  • ¾ cup extra-virgin olive oil
  • 1 tsp. kosher salt
  • 1 lime (or 1 tablespoon of vinegar)

Directions: Blend all ingredients, and pour on pasta! Add chicken or shrimp for added protein.

2. Oatmeal Pancakes

These are a staple at my house on the weekends and super versatile. You can add a variety of toppings and everyone will love them. Here’s the recipe for your base:

  • 3/4 cup almond butter
  • 1/2 cup almond milk
  • 2 cups old-fashioned oats divided (or instant oatmeal)
  • 2 large eggs
  • 1 banana or handful of dates (for sweetness)
  • 1 tablespoon baking powder

Toppings:

  • 1/2 tsp.ground cinnamon and/or cardamom
  • 1 tsp. pure vanilla extract
  • 1 tablespoon of cacao powder
  • ¾ of cup of blueberries
  • ¾ of strawberries
  • chocolate chips

Directions:

Blend all ingredients, including toppings (except for chocolate chips) together and cook like regular pancakes! If you have extra ones, store them and give them as snacks or breakfast the following day.
